Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg
Binds the minced fish together and gives the coating a golden finish.
Flour
Absorbs moisture and helps the mixture hold its shape when rolled.
Bread or cracker crumbs
Forms a crisp, browned outer crust when fried.
Fish bones, heads, and tails
Release flavor and gelatin into the water to build the gravy.

The step that matters

Rolling and coating the balls. The mix is soft and wet, so if it is not firm and evenly coated with egg and crumbs, the croquettes can fall apart or absorb oil while frying.
