Potted Fish

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Place the fish pieces in a stone jar.

  2. Sprinkle with coarse sea salt, whole pepper, and allspice.

  3. Cover the fish with cider vinegar.

  4. Make a stiff paste with flour and cover the jar.

  5. Bake in a 300°F (150°C) oven for three to four hours.

  6. Store tightly covered in a cool place for up to six weeks.
