Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the meat mixture so the rolls hold their shape while frying.
Cold beef
Provides the main protein body and savoury flavour of the croquettes.
Milk
Adds moisture to the mixture, keeping the croquettes from drying out.

The step that matters

Fry the rolls until golden brown. Frying in hot oil browns the surface through the Maillard reaction, creating flavour and colour. If the oil is not hot enough, the rolls absorb oil and turn greasy, while the interior may stay underdone.
