Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

Mix and bake

  1. In a large bowl, combine the chopped beef, salt, black pepper, rolled crackers, cream, milk, butter, eggs, and thyme. Mix well until all ingredients are combined.

  2. Transfer the mixture to a baking pan and pour a little water over it. Add a small piece of butter on top for basting.

  3. Bake for 2 hours.

  4. Let it cool before serving.

What each ingredient does

Beef
Forms the bulk of the loaf and gives it its meaty structure and rich flavor.
Eggs
Bind the mixture and set when baked, holding the loaf together in slices.
Rolled crackers
Soak up liquid and help keep the loaf tender rather than dense.
Cream
Adds moisture and richness, keeping the loaf juicy as it bakes.
Milk
Adds moisture and softness to the mixture, helping keep the loaf tender.
Butter
Adds fat for richness and moisture as it melts into the loaf.

Swap the thyme

How well each one fits the dish's main ingredients (beef, pepper, cream, milk, egg, butter):

  1. Nutmegfits better
  2. Parsleyfits better
  3. Tarragonfits better
  4. Thymethe original
