Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ground beef or veal
Forms the bulk of the loaf and provides the meaty body of the dish.
Eggs
Bind the mixture and help it set firm as the loaf bakes.
Boston crackers
Absorb moisture and add bulk, helping the loaf hold together.
Isinglass
Gelatin-like binder that helps the loaf set and hold its shape when cooled.
Salt pork
Adds fat and moisture, keeping the lean meat from drying out.

The step that matters

Let cool before slicing. The loaf is held together by eggs and isinglass, which set as they cool. Slicing while hot can cause it to crumble and lose its shape.

Swap the clove

How well each one fits the dish's main ingredients (beef, pork, butter, pepper, egg):

  1. Parsleyfits better
  2. Thymefits better
  3. Nutmegfits better
  4. Clovethe original

Fit is the average pairing score against beef, pork, butter, pepper, egg. Candidates are from the same food group and used in at least 100 recipes.
