What each ingredient does

Chicken
Forms the bulk of the salad and gives it its main substance and texture.
Celery
Adds crisp texture and a fresh, crunchy contrast to the soft chicken.
Hard-boiled egg yolks
Mashed into the salad, they add richness and a creamy body.
Sweet oil
Adds fat and moisture, carrying flavor and keeping the chicken tender.
Vinegar
Adds acidity that brightens the flavor and balances the richness of the oil and yolks.

The step that matters

Mix in the mashed egg yolks just before serving. Mashed yolks blended in early can turn the salad dull and pasty as they absorb moisture from the chicken and oil. Adding them shortly before serving keeps the texture light and creamy.

Swap the celery

How well each one fits the dish's main ingredients (chicken, egg, vinegar, pepper):

  1. Tarragonfits better
  2. Dillfits better
  3. Garlicfits better
  4. Celerythe original

Fit is the average pairing score against chicken, egg, vinegar, pepper. Candidates are from the same food group and used in at least 100 recipes.
