Puff Paste

Ingredients

Directions

  1. Weigh 1 pound of flour and ¾ pound of butter. Place a piece of ice on the butter.

  2. Divide the flour into two parts. Take half of the butter and chop it into half of the flour with a knife until well combined.

  3. Slowly add ice water while stirring with the knife until the mixture holds together. You may not need all the water.

  4. On a floured surface, place a generous handful of the remaining flour and turn the dough onto it. Sprinkle flour over the dough and your rolling pin.

  5. Roll out the dough to the size of a dinner plate. Take one part of the butter and cut it into walnut-sized pieces, placing them on the dough without spreading.

  6. Sprinkle flour over the butter and fold the dough over it. Repeat this process with the second and third parts of the butter, rolling out the dough each time.

  7. After the last folding, leave the dough in a roll. Cut off a piece about 2 inches thick and roll it out on a floured surface until thin enough for a pie plate.

  8. Transfer the rolled dough to the pie plate, ensuring it is slightly larger than the plate.
