Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Thickens the milk as it cooks, giving the pudding its body and texture.
Egg yolks
Enrich and thicken the pudding, adding richness and a smooth custard-like body.
Egg whites
Whipped with sugar to form a meringue that sets and browns on top.
Milk
Forms the liquid base that the tapioca swells in and thickens.
Sugar
Sweetens the pudding and helps stabilize the whipped egg white meringue.

The step that matters

Stir the yolk mixture into the pudding. Egg yolks can scramble if they meet very hot liquid too quickly. Adding them gradually while stirring, and keeping the mixture moving, helps them blend in smoothly and thicken the pudding evenly.
