Tapioca Cream

Ingredients

Directions

Prepare the tapioca

  1. Soak the tapioca in milk or water until soft.

  2. Boil the milk in a pail set in water.

Make the custard

  1. Beat the eggs, separating the yolks and whites.

  2. Add the yolks to the milk along with the sugar and tapioca, then boil until it thickens to a cream-like consistency. Be careful not to let it curdle.

  3. Once cooled, beat the egg whites to stiff peaks and mix in the additional sugar.

  4. Fold the whipped egg whites into the tapioca mixture.

  5. Add the cream and flavoring before topping with the egg whites.

Garnish

  1. Garnish with currant jelly.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Thickens the milk as it cooks, giving the cream its body and soft texture.
Eggs
Yolks enrich and thicken the custard, while whipped whites add lightness to the finished cream.
Milk
Forms the liquid base that the tapioca swells in and thickens into a cream.
Sugar
Sweetens the cream and helps stabilise the whipped egg whites.

The step that matters

Boil the yolk mixture without letting it curdle. Egg yolks are proteins that set when overheated and can scramble or curdle. Holding a gentle boil while the tapioca thickens keeps the custard smooth.

Swap the currant

How well each one fits the dish's main ingredients (milk, egg, sugar, cream):

  1. Vanillafits better
  2. Strawberryfits better
  3. Raspberryfits better
  4. Currantthe original

Fit is the average pairing score against milk, egg, sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
