Why it works: Potato and ginger work together. They rank in the top 12% of all ingredient pairs, and cooks put them together in 992 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the potato base

  1. Boil the potatoes until tender, then mash them well.

  2. Steep a pinch of hops in a tin cup of water, then strain the hop-water into the mashed potatoes.

  3. Add ginger, salt, and sugar to the potatoes.

Make the sponge

  1. Dissolve the yeast cake in a little lukewarm water.

  2. In a bread pan, combine the sifted flour and warm water to make a sponge.

  3. Mix in the potatoes and dissolved yeast, then beat well.

  4. Let the sponge rise in a warm place for 1 hour until light.

Shape and bake

  1. Mold the dough into a large loaf and let it rise for another 30 minutes.

  2. Knead the dough well, then shape into loaves and let rise again for 30 minutes.

  3. Bake the loaves in a preheated oven at 400°F (200°C) until done.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Add starch and moisture, giving the bread a soft, tender crumb.
Flour
Forms the gluten network that gives the dough structure and chew.
Yeast
Produces gas as it ferments, making the dough rise and become light.
Sugar
Feeds the yeast and helps the crust brown during baking.

The step that matters

Let the sponge rise until light. The sponge needs time for yeast to ferment and build gas bubbles before the other ingredients are added. Rising too briefly leaves the bread dense, while the dough needs enough time to develop structure.

Swap the potato

How well each one fits the dish's main ingredients (hops, ginger, sugar, flour):

  1. Mustardfits better
  2. Arrowrootfits better
  3. Parsnipfits better
  4. Potatothe original

Fit is the average pairing score against hops, ginger, sugar, flour. Candidates are from the same food group and used in at least 100 recipes.
