Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

Make and bake the batter

  1. In a large bowl, mix the flour, brown sugar, butter, eggs, currants, citron, and grated nutmegs thoroughly.

  2. Dissolve the baking soda in a small amount of water and add it to the mixture just before baking.

  3. Pour the batter into three greased loaf pans.

  4. Bake in the preheated oven until a toothpick inserted in the center comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

All-purpose flour
Provides the structure that holds the dense batter together as it bakes.
Brown sugar
Adds sweetness, moisture and a caramel-like flavor and browning.
Butter
Adds fat for tenderness and rich flavor in the crumb.
Eggs
Bind the batter and help set the structure during baking.
Baking soda
Reacts with the batter's acidity to produce gas that helps it rise.

The step that matters

Adding the baking soda. Baking soda needs an acid in the batter to release gas and lift the cake. Dissolving it in water and adding it just before baking keeps that gas from escaping before the cake reaches the oven.
