Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare and mix

  1. Preheat your oven to 350°F (175°C).

  2. In a large bowl, cream together the butter and sugar until light and fluffy.

  3. Add the eggs one at a time, mixing well after each addition.

  4. Stir in the dough and mix until combined.

  5. Fold in the raisins.

Bake

  1. Pour the batter into a greased baking pan and bake for about 30-40 minutes, or until a toothpick inserted in the center comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds richness and fat, keeping the crumb tender.
Sugar
Adds sweetness and, when creamed, helps trap air for lift.
Eggs
Add structure and bind the batter together.
Raisins
Add sweetness and chewy pockets throughout the cake.

The step that matters

Cream the butter and sugar until light and fluffy. Beating butter and sugar traps air in the fat, which expands in the oven and gives the cake lift. Under-creaming leaves a dense texture.

Swap the raisin

How well each one fits the dish's main ingredients (butter, sugar, egg):

  1. Vanillafits better
  2. Lemonfits about as well
  3. Raisinthe original
  4. Figfits about as well

Fit is the average pairing score against butter, sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
