Little Pound Cakes

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Preheat the oven to 350°F (175°C).

  2. Cream the butter and sugar together until light and fluffy.

  3. Grate in a little nutmeg.

  4. Add the beaten egg yolks and mix well.

  5. Stir in the sweet milk and the beaten egg whites.

  6. In a separate bowl, combine 1 cup of flour with the baking powder, then add to the mixture.

  7. Gradually add the remaining flour, mixing until just combined.

Bake and frost

  1. Pour the batter into patty pans or muffin rings.

  2. Bake until golden brown and a toothpick comes out clean.

  3. Frost with the reserved beaten egg whites once cooled.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creamed with sugar to trap air, giving the cake a tender, rich crumb.
Eggs
Egg yolks add richness and structure, while whites add lift and a light texture.
All-purpose flour
Forms the structure of the cake as its proteins set during baking.
Baking powder
Releases gas in the batter, helping the cake rise.
Sugar
Sweetens the cake and helps create a light, fluffy creamed base.

The step that matters

Mixing in the flour. Once flour is added, overmixing develops gluten and can make the cake tough and dense. Mix only until the flour is just combined.

Swap the nutmeg

How well each one fits the dish's main ingredients (butter, sugar, egg, milk, flour):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Jalapenofits less well
  4. Capersfits less well

Fit is the average pairing score against butter, sugar, egg, milk, flour. Candidates are from the same food group and used in at least 100 recipes.
