What each ingredient does

Strawberries
Supply the fruit, flavor, and natural pectin that help the jam thicken.
Sugar
Adds sweetness, helps the jam set, and helps preserve it.

The step that matters

Adding the sugar and cooking it further. Sugar must dissolve fully into the hot fruit before the extra cooking. Sugar and fruit pectin together let the jam thicken as it cooks. Cooking too briefly leaves it runny, while overcooking can scorch it or make it stiff.
