Custard

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Remove from heat and quickly beat in the egg yolks, butter, cayenne pepper, salt, and nutmeg.

  2. Butter a baking dish.

  3. Layer dressing, then fish, repeating until the dish is full, finishing with dressing on top.

  4. Cover with grated bread crumbs.

  5. Bake for 45 minutes at 350°F (175°C).
