Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the main body of the dish, cooked through by boiling before browning.
Flour
Coats the chicken for browning and thickens the milk into a gravy.
Butter or lard
Conducts heat for browning the floured chicken and adds rich fat flavor.
Milk
Forms the liquid base of the gravy, which thickens as it simmers with flour.

The step that matters

Browning the floured chicken. Flour coating browns through Maillard reactions and fat heat, so the pan must be hot and the chicken turned until well colored on all sides. Crowding or low heat leaves the coating pale and gummy rather than golden and flavorful.
