Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the turkey

  1. Wash and drain the turkey thoroughly, using baking soda in the water to purify it. Rinse well.

Stuff and season

  1. Stuff the body and crop with chopped bread or cracker crumbs moistened with oyster liquor and whole oysters.

  2. Season with salt and pepper, and add melted butter.

Roast

  1. Place the stuffed turkey on a gridiron over a dripping pan with ½ cup of water.

  2. Bake in a hot oven at 400°F (200°C) for about 10 minutes per pound for a young turkey, longer for an older one.
