Roast Goose

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Parboil the goose until partially cooked.

  2. Prepare a stuffing of your choice and stuff the goose.

  3. Roast the stuffed goose at 350°F (175°C) until fully cooked.

  4. Optionally, cover the goose with a paste of flour and water while baking, removing it before serving.

  5. Serve the roast goose with apple sauce.
