Beef a LA Mode

Ingredients

Directions

Prepare the beef

  1. Select a good round of beef about 3 inches thick, with bone and fat.

  2. Make incisions in the beef and fill them with a dressing made of seasoned bread, onion, and Worcestershire sauce, compressing it well.

  3. Stick whole cloves over the top of the beef.

Braise and brown

  1. Place the beef in a dripping pan with enough water to prevent burning.

  2. Cover with a large pan to keep in the steam and cook slowly for 2 to 3 hours.

  3. Half an hour before serving, remove the cover, baste frequently, and allow it to brown.

  4. During the last half hour, add thin slices of potatoes, carrots, and turnips to the pan to garnish the dish.

What each ingredient does

Beef round
Forms the main body of the dish, and slow cooking under cover makes it tender.
Seasoned bread
Absorbs the juices and cooking liquid inside the meat, keeping the filling moist.
Onion
Adds aroma and savory flavor to the bread dressing as it cooks inside the beef.
Worcestershire sauce
Adds acidity and savory depth to the dressing and the meat.
Potatoes, carrots, and turnips
Add sweetness and color around the beef as they cook in the pan juices.

The step that matters

Browning the beef after the cover is removed. Removing the cover and basting exposes the surface to dry heat, which drives browning through the Maillard reaction. Too little basting or time can leave the surface pale, while too much heat can dry it out.

Swap the clove

How well each one fits the dish's main ingredients (beef, bread, pepper, onion, sauce, potato, carrot):

  1. Parsleyfits better
  2. Celeryfits better
  3. Garlicfits better
  4. Clovethe original

Fit is the average pairing score against beef, bread, pepper, onion, sauce, potato, carrot. Candidates are from the same food group and used in at least 100 recipes.
