Beef Qr Veal Loaf

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

Mix and bake

  1. In a large bowl, combine the ground meat, chopped salt pork, crushed crackers, dissolved isinglass, butter, salt, pepper, cloves or nutmeg, and beaten eggs. Mix well until all ingredients are thoroughly combined.

  2. Transfer the mixture to a loaf pan and bake for 1 hour.

  3. Let cool before slicing.

What each ingredient does

Ground meat
Forms the body of the loaf and gives it its meaty flavor and structure.
Eggs
Bind the mixture and set when baked, holding the loaf together.
Boston crackers
Absorb liquid and add bulk, helping keep the loaf moist and tender.
Isinglass
Gelatin-like binder that helps the loaf hold its shape and stay moist.
Salt pork
Adds fat, which keeps the loaf juicy and adds savory richness.

Fit is the average pairing score against meat, pork, butter, pepper, egg. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
