Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Thicken the dressing as they cook gently, giving it a creamy body.
Sweet cream
Adds richness and smoothness, carrying the flavour of the dressing.
Vinegar
Adds acidity that sharpens the dressing and balances the richness.
Melted butter
Adds fat for a smooth, rich mouthfeel.
Mixed mustard
Adds sharp, pungent flavour that complements the cabbage.

The step that matters

Thickening over hot water. Eggs can scramble if the heat is too high. Stirring constantly over gentle hot water lets the egg proteins set slowly into a smooth, thickened sauce.
