Escaloped Tomatoes

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

Assemble

  1. In an earthen baking dish, layer cracker crumbs and small bits of butter.

  2. Add a layer of tomatoes and sprinkle a little sugar over them.

  3. Repeat the layers until the dish is filled, finishing with cracker crumbs on top.

  4. Pour a little water over the top to moisten.

  5. Season with pepper and coarse sea salt to taste.

Bake

  1. Bake for 30 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tomatoes
Provide the main body and juicy filling that softens and blends with the crumbs as it bakes.
Cracker crumbs
Absorb the tomato juices and bake into a soft, thickened layer with a toasted top.
Butter
Adds richness and fat that helps the crumbs brown on top.
Sugar
Balances the acidity of the tomatoes with a touch of sweetness.
