What each ingredient does

Beef
Provides the bulk of the meat body, which is cooked, then finely chopped for a tender texture.
Suet
Adds fat that keeps the mixture moist and rich as it cooks.
Apples
Add tartness and moisture that balance the sweetness of the sugar and molasses.
Raisins
Contribute concentrated sweetness and chewy body to the mixture.
Brown sugar
Adds sweetness and helps the mixture darken and deepen in flavour as it cooks.
Brandy
Adds aroma and acts as a preservative in the mixture.

The step that matters

Cooking slowly for 2 hours. Slow cooking blends the spices and sugars into the meat and fruit and drives off excess liquid. Too fast or too short a cook leaves the flavours separate and the mixture too wet to keep well.

Swap the currant

How well each one fits the dish's main ingredients (beef, pepper, apple, raisin, orange, lemon, sugar):
