Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Add richness and emulsify with the sugar to give a smooth, custard-like body.
Heavy cream
Whipped to stiff peaks, it forms the airy, frozen body of the glace.
Powdered sugar
Sweetens the mixture and dissolves smoothly into the yolks, softening the frozen texture.
Pounded ice
Packed around the capsules with salt to chill the mixture without a freezer.

The step that matters

Packing the tin box with ice and salt. Salt lowers the melting point of the ice, so the brine gets colder than plain ice and can freeze the cream. Packing tightly keeps the capsules in contact with the cold brine.
