Veal Loaf I

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the loaf

  1. In a large bowl, combine veal, salt pork, butter, salt, pepper, sage, marjoram, beaten eggs, and rolled crackers. Mix all ingredients thoroughly and shape into a loaf.

Bake and serve

  1. Place the loaf in a pan, sprinkle with the reserved 2 tablespoons of cracker, and dot with bits of butter.

  2. Bake at 350°F (175°C) for 2 hours.

  3. Allow to cool before slicing.

  4. Garnish with sliced lemon before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Forms the main body of the loaf and gives it its meaty texture.
Eggs
Bind the mixture so the loaf holds its shape when sliced.
Crackers
Absorb moisture and add body, helping the loaf stay tender and cohesive.
Butter
Adds fat and richness, keeping the loaf moist as it bakes.
Salt pork
Contributes fat and savory flavor that carries through the loaf.

The step that matters

Shaping and mixing the loaf. Mixing the meat, eggs and crackers thoroughly distributes the binder evenly, so the loaf holds together when sliced instead of crumbling.

Flavor stand-ins for the marjoram

How well each one fits the dish's main ingredients (veal, pork, butter, pepper, sage, egg):

  1. Marjoramthe original
  2. Thymeabout as good a flavor fit
  3. Parsleyabout as good a flavor fit

Fit is the average pairing score against veal, pork, butter, pepper, sage, egg. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
