Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the stock

  1. Soak the gelatine in ½ cup cold water for 30 minutes.

  2. Combine 1 tablespoon carrot, onion, celery, and 1 pint cold water in a pot. Bring the mixture to a boil.

  2. Refrigerate until hardened.

  3. Serve on blocks of tomato aspic jelly with mayonnaise or tartar sauce.

What each ingredient does

Gelatine
Sets the liquid into a firm loaf that holds its shape when chilled.
Chopped salmon
Provides the main fish filling, suspended in the set gelatine layer.
Lemon juice
Adds acidity that brightens the flavour of the fish and stock.
Tomato aspic jelly
Serves as a savoury, tomato-flavoured jelly base for presenting the loaf.

The step that matters

Soak the gelatine before adding it. Gelatine must hydrate fully in cold water so it dissolves evenly into the hot stock. Unhydrated granules left in the mixture can leave gritty patches and weaken the set once chilled.

Swap the onion

How well each one fits the dish's main ingredients (celery, carrot, lemon, pepper, salmon, tomato, sauce):

  1. Capsicumfits better
  2. Spinachfits better
  3. Cucumberfits better
  4. Onionthe original

Fit is the average pairing score against celery, carrot, lemon, pepper, salmon, tomato, sauce. Candidates are from the same food group and used in at least 100 recipes.
