What each ingredient does

Rice
Its starch thickens the milk as it cooks, giving the pudding a soft, creamy body.
Milk
Forms the liquid base that the rice cooks in and becomes the body of the pudding.
Gelatin
Sets the pudding so it holds its shape when chilled.
Cream
Whipped and folded in, it adds lightness and richness to the pudding.
Almonds
Add nutty flavor and a slight crunch against the soft pudding.
Sugar
Adds sweetness to the pudding base.

The step that matters

Fold in the whipped cream only once the pudding is cool. Heat collapses whipped cream and deflates its air, making the pudding dense. Cooling first keeps the foam intact, and the gelatin then sets the pudding around the trapped air for a light texture.
