What each ingredient does

Mangoes
Provide the main fruit flavor, natural sweetness and the bulk of the pulp.
Sugar
Adds sweetness and, by lowering the freezing point, keeps the frozen dessert softer.

The step that matters

Let the syrup cool before freezing. Freezing a warm mixture slows the process and can form larger ice crystals, giving a coarser, icier texture. Letting the syrup and puree cool fully first helps a smooth result.
