Why it works: Flour and raisin match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 9,075 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓

Watermelon Cake

Oven, in the book's wordsA rather slow oven

Ingredients

Directions

The book says “a rather slow oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 350°F (175°C).

  2. Cream the butter and sugar together until light and fluffy.

  3. Add the egg whites and mix well.

  4. In a separate bowl, combine the flour, cream of tartar, and baking soda.

  5. Gradually add the dry ingredients to the butter mixture, alternating with the sweet milk.

  6. Take a little more than half of the batter and mix in the liquid cochineal and raisins.

  7. Pour the red batter into the center of a greased cake pan and then pour the remaining batter around it.

  8. Bake until a toothpick inserted in the center comes out clean.

  9. Once cooled, cover the cake with green frosting.
