What each ingredient does

Cranberries
Provide the main flavor, tartness, and natural pectin that helps the jelly set.
Sugar
Adds sweetness and, with the fruit's pectin and acid, helps the juice gel.

The step that matters

Adding the sugar to the juice. The sugar must be measured against the juice, because sugar, pectin, and acid together form the gel. Too little sugar can leave the jelly loose and runny.
