Cake, Vanilla

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Whisk the eggs and sugar together until stiff and frothy.

  2. Gently stir in the sifted flour and vanilla essence.

  3. Pour the mixture into a buttered square cake tin.

Bake and decorate

  1. Bake in a 350°F (175°C) oven for about 30 minutes.

  2. Once cold and firm, coat the cake thinly with butter icing flavored with vanilla.

  3. Press browned chopped almonds around the sides.

  4. With some of the butter icing, pipe roses on half the top, and color the rest pale pink to pipe the other half.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whisked to a stiff foam, they trap air that lifts the cake as it bakes.
Self-raising flour
Provides the starch structure that sets the crumb once baked.
Castor sugar
Whisked with the eggs to help stabilize the foam and add sweetness and tenderness.

The step that matters

Gently stir in the flour. Overmixing after the flour goes in develops gluten and deflates the whisked egg foam, making the cake dense instead of light.

Swap the almond

How well each one fits the dish's main ingredients (egg, vanilla, sugar, flour):

  1. Almondthe original
  2. Chestnutfits about as well
  3. Macadamia nutfits less well
  4. Hazelnutfits less well

Fit is the average pairing score against egg, vanilla, sugar, flour. Candidates are from the same food group and used in at least 100 recipes.
