Why it works: Pepper and allspice match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 6,395 recipes. Both carry estragole, which smells anise, licorice. The science ↓
Mutton Olives
Ingredients
Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.
Take equal-sized slices of cold mutton and season with salt, pepper, and a little allspice.
Place a small amount of veal stuffing on each slice, roll them up, and secure with thread.
Place the rolls in a baking dish and pour gravy over them.
Cover with greased paper and bake at 350°F (175°C) for 30 minutes.
Serve with mashed potato and red-currant jelly.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
