Scallops En Coquilles

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Trim the scallops, removing the black portion.

  2. Wash the scallops in vinegar and cut them into pieces.

  3. Place the scallops in buttered shells and mix with thick white sauce and some bread crumbs.

  4. Season with salt, pepper, and squeeze lemon juice over the mixture.

  5. Sprinkle more bread crumbs on top and add small bits of butter.

  6. Brown nicely in a 400°F (200°C) oven.
