Vegetable Marrow, Stuffed

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the marrow

  1. Peel the marrow, cut it in half lengthwise, and scoop out the seeds.

  2. Boil the marrow in salted water until half cooked, then drain.

Make the stuffing

  1. Make a stuffing with the minced meat, bread crumbs, onion, parsley, and herbs.

  2. Moisten the stuffing with a little brown sauce and season well.

Bake and serve

  1. Fill the marrow halves with the stuffing and pin them together.

  2. Place the stuffed marrow on a greased baking tin, cover with greased paper, and bake at 400°F (200°C) for 30 minutes.

  3. Sprinkle with brown bread crumbs and serve with brown or tomato sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Vegetable marrow
Forms the edible shell that holds the stuffing while it cooks.
Minced meat
Provides the main filling, adding richness and savoury flavour as it cooks.
Bread crumbs
Absorbs moisture and binds the stuffing so it holds together when sliced.
Onion
Adds aromatic sweetness and depth of flavour to the stuffing.
Brown sauce
Moistens the stuffing and adds savoury, browned flavour.

The step that matters

Boil the marrow until only half cooked. Marrow turns soft and watery if fully cooked before baking. Partial cooking keeps its shape and texture while the filling finishes cooking in the oven.
