What each ingredient does

Beefsteak
Provides the main protein, which browns under the broiler and becomes tender when cooked quickly.
Butter
Adds richness and carries flavour, and browns lightly when frying the onions.
Onion
Softens and turns sweet when fried gently, giving the sauce its body and flavour.
Lemon juice
Adds acidity that brightens the buttery onion sauce and balances the richness of the meat.

The step that matters

Frying the onion without scorching. Onions burn easily in butter at high heat, which turns them bitter and dark. Gentle frying lets the sugars caramelise slowly into sweetness.

Swap the onion

How well each one fits the dish's main ingredients (pepper, butter, lemon, mustard):

  1. Shallotfits better
  2. Horseradishfits better
