Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 400°F (200°C).

Make the batter

  1. Whip the egg yolks until thick and smooth.

  2. Add the milk to the yolks.

  3. In a separate bowl, whip the egg whites until stiff.

  4. Quickly stir in the flour and then fold in the egg whites.

  5. Half fill heated gem pans with the batter.

Bake and serve

  1. Bake in the preheated oven until done.

  2. Serve immediately.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites trap air that makes the batter rise; yolks add richness and set structure.
Flour
Starch and gluten form the structure that holds the puffed batter in shape.
Milk
Provides liquid that turns to steam in the oven, moistening and helping the batter puff.

The step that matters

Fold in the egg whites gently. Fold the stiff egg whites into the batter gently and briefly to keep the air bubbles that give lift. Stirring hard knocks out air and develops gluten, making the result dense and tough.
