What each ingredient does

Pearl barley
Swells as it simmers, thickening the broth and giving it a chewy body.
Mutton or veal
Releases gelatin and flavor into the long-cooked broth, giving it body and richness.
Onion
Fried to brown first, adding savory depth and aroma to the broth.
Carrot
Adds mild sweetness and color to the finished broth.

The step that matters

Skim off the fat after the overnight rest. Once chilled, the fat solidifies on the surface and can be lifted off cleanly. Skimming it before reheating keeps the broth from tasting greasy.

Swap the onion

How well each one fits the dish's main ingredients (mutton, veal, carrot, pepper, barley):

  1. Leekfits better
  2. Turnipfits better
  3. Capsicumfits better
