What each ingredient does

Long clams
Provide the main seafood flavor and tender chewy texture in the chowder.
Potatoes
Break down partly as they cook, thickening the broth and adding body.
Tomatoes
Add acidity and savory depth that balances the rich pork fat.
Pilot biscuits
Soak up liquid and thicken the chowder slightly as they break down.
Salt pork
Renders fat that carries flavor and gives the onion and broth richness.
Butter and browned flour (in the method)
Thicken the broth and add a toasted, nutty flavor at the end.

The step that matters

Adding the clams late. Clams turn tough and rubbery when overcooked. Adding them about thirty minutes before the end, as the record says, lets them warm through and stay tender.

Swap the tomato

How well each one fits the dish's main ingredients (clam, potato, onion, biscuit, pork, allspice, clove):

  1. Mustardfits better
  2. Chivefits better
  3. Shallotfits better
  4. Tomatothe original

Fit is the average pairing score against clam, potato, onion, biscuit, pork, allspice, clove. Candidates are from the same food group and used in at least 100 recipes.
