Breaded Chops Trimmed a LA Francaise

Ingredients

Directions

  1. Trim the skin, gristly parts, and most fat from the chops, leaving two inches of clean bone.

  2. Wrap the bone with a piece of white tissue paper, fringed on the outer edge.

  3. Open the canned peas two hours before cooking, drain, rinse, and leave in a cold place.

  4. Boil the peas in salted water with a small lump of loaf sugar for twenty minutes.

  5. Drain the peas, stir in butter, salt, and pepper to taste, and serve in a hot dish.
