Christmas Mince-Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

  1. Preheat the oven to 400°F (200°C).

  2. Prepare the pie crust and set aside.

  3. In a large bowl, combine chopped pheasants, partridges, and woodcock.

  4. Add sweet herbs, lemon peel, mushrooms, and diced fat bacon.

  5. Mix in egg yolks, melted butter, and gravy.

  6. Season with spices and bay leaves to taste.

  7. Fill the prepared pie crust with the meat mixture.

  8. Cover with another layer of pie crust, sealing the edges.

  9. Cut slits in the top crust for steam to escape.

  10. Bake in the preheated oven for 45-60 minutes until golden brown.
