What each ingredient does

Salmon
Forms the main body of the croquettes and provides the flavour and protein structure.
Eggs
Bind the mashed salmon together and add structure, and also form the coating that helps the crumbs stick.
Bread crumbs
Absorb moisture and give the mixture body, and form a crisp, browned outer crust when fried.

The step that matters

Fry until golden brown. Frying in hot fat browns the crumb coating through the Maillard reaction and crisps it, while the moist salmon inside cooks through. Too low a heat leaves the coating greasy and pale.
