Strawberry Shortcake

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the dough

  1. Preheat the oven to 400°F (200°C).

  2. In a bowl, mix flour, baking powder, sugar, lard, and salt.

  3. Add milk gradually until a dough forms.

  4. Divide the dough in half and roll each part thin.

Bake and assemble

  1. Place one rolled dough in a pan and spread lightly with butter.

  2. Cover with the second rolled dough and bake until golden.

  3. Once baked, turn the cake out onto a dish and remove the top layer.

  4. Spread the mashed strawberries over the bottom layer and cover with the removed crust.

  5. Sprinkle additional sugar on top before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the structure of the dough, setting the crumb as it bakes.
Baking powder
Releases gas during baking so the layers rise and turn light.
Lard
Adds fat that keeps the layers tender and short rather than tough.
Strawberries
Provide moisture, sweetness and acidity to the filling between the layers.
Egg
Adds structure and richness to the dough, helping it bind.

The step that matters

Rolling the dough thin before baking. Thin layers bake through evenly and turn golden without staying gummy in the middle. Thick dough can stay raw inside while the outside over-browns.
