What each ingredient does

Cucumber pickles
Forms the bulk of the dish and absorbs the sweet-sour liquid over time.
Vinegar
Provides the sharp acidity that preserves and flavours the pickles.
Sugar
Balances the acidity and adds sweetness to the brine.
Whole black pepper
Adds a sharp, warm spice note to the brine.
Whole allspice
Contributes a warm, aromatic flavour to the brine.

The step that matters

Pour the hot mixture over the cucumbers and seal the jar tightly. The brine must be hot and the jar sealed so the liquid penetrates the cucumbers and the contents stay protected while they stand. Sealing traps the mixture and limits exposure to air, which helps prevent spoilage during the long rest.

Swap the cucumber

How well each one fits the dish's main ingredients (vinegar, sugar, pepper, allspice):

  1. Mustardfits better
  2. Capsicumfits better
  3. Horseradishfits about as well
  4. Cucumberthe original

Fit is the average pairing score against vinegar, sugar, pepper, allspice. Candidates are from the same food group and used in at least 100 recipes.
