Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Black beans
Provide the main body and earthy flavour of the soup as they break down during long boiling.
Butter
Fat for frying the onion and carrot, building a rich base flavour.
Flour
Browned in butter and stirred in, it thickens the soup and adds a toasted flavour.
Stock
Adds savoury depth and liquid to the soup.

The step that matters

Cooking the flour in butter until brown. Flour must be cooked long enough to lose its raw taste and reach an even brown colour before it goes into the soup; if it is added pale or scorched, the soup can taste pasty or bitter and thicken unevenly.

Swap the mace

How well each one fits the dish's main ingredients (beans, clove, allspice, cinnamon, onion, carrot, butter):

  1. Nutmegfits better
  2. Cuminfits better
  3. Cardamomfits better
  4. Macethe original

Fit is the average pairing score against beans, clove, allspice, cinnamon, onion, carrot, butter. Candidates are from the same food group and used in at least 100 recipes.
