Stuffed Irish Potatoes

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Wash the potatoes and bake them in a 400°F (200°C) oven until done.

  2. Cut the potatoes in half and scoop out the insides, reserving the hulls.

  3. Mash the scooped potato and mix in butter, pepper, salt, and minced onion.

  4. Return the mixture to the potato hulls and set them upright in a pan.

  5. Brown the stuffed potatoes in the oven and serve hot on a folded napkin.
