What each ingredient does

Sweetbreads
Provide the tender, rich meat that forms the body of the ragout.
Rich brown gravy
Supplies the liquid and savoury base that the stew cooks in and is reduced.
Butter
Adds richness and body to the sauce when rolled in flour and stirred in.
Flour
Thickens the sauce as it cooks with the butter.
Mushrooms
Contribute earthy flavour and moisture to the stew.

The step that matters

Reducing the gravy. Reducing concentrates the gravy's flavour and thickens it slightly by evaporating water, so the sauce does not turn thin or watery once the other ingredients are added.
