  2. In a deep dish, combine the rice and skim milk.

  3. Bake for 1.5 hours until the rice is tender.

Enrich and serve

What each ingredient does

Long-grain rice
Forms the bulk of the pudding as its starch swells and softens during baking.
Skim milk
Provides the cooking liquid that the rice absorbs, creating the pudding's creamy base.
Eggs
Set during cooking to give the pudding body and a richer, custard-like texture.
Sugar
Adds sweetness and helps balance the flavor of the milk and nutmeg.
Butter or suet
Adds fat for richness and a softer, more tender mouthfeel.

The step that matters

Bake until the rice is tender. Rice must absorb the milk and its starch must fully soften during baking. Stopping early leaves firm grains, while baking too long dries the pudding and makes it stiff.

Swap the currant

The recipe marks currant as optional. How well each one fits the dish's main ingredients (rice, milk, egg, sugar, nutmeg, butter):

  1. Vanillafits better
  2. Coconutfits better
  3. Figfits better
  4. Currantthe original

Fit is the average pairing score against rice, milk, egg, sugar, nutmeg, butter. Candidates are from the same food group and used in at least 100 recipes.
