Pigeon Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Preheat the oven to 400°F (200°C).

  2. In a pie dish, layer the small pieces of rump steak and season with cayenne pepper and coarse sea salt.

  3. Place a piece of butter inside each pigeon, rolled in the seasoning, and lay the pigeons breast down.

  4. Add the yolks of the hard boiled eggs and force meat balls if desired.

  5. Pour in the water or gravy.

Finish and bake

  1. Wash the crust with beaten egg.

  2. Decorate with pastry leaves and place the cleaned feet of the pigeons in the center, rubbing them with butter to prevent burning.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pigeons
Provide the main meat, with rich, dark flavor that deepens during the long bake.
Rump steak
Adds savory beef flavor and tender, juicy meat to the filling.
Butter
Adds fat and richness, keeping the pigeon meat moist as it cooks.
Hard boiled egg yolks
Add a creamy, rich texture that thickens the filling.

The step that matters

Rubbing the pigeon feet with butter. The exposed feet are thin and bare, so they scorch easily in the hot oven. A coat of butter protects them and helps them brown evenly rather than burn.
