Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rye flour
Adds earthy flavor and structure while contributing less gluten than wheat flour.
Indian meal
Cornmeal that gives the bread a coarse, crumbly texture.
Molasses
Adds sweetness, dark color, and moisture to the loaf.
Baking soda
Reacts with the acidic molasses to produce gas that lifts the bread.
Milk
Provides moisture and helps hydrate the flours into a batter.

The step that matters

Transfer to a greased mold and steam for three hours. Steaming keeps the loaf moist while it sets. The mold must be sealed and greased so the bread releases cleanly, and water must not boil away, or the loaf can dry out or become dense.
