Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the batter

  1. Preheat your oven to 350°F (175°C).

  2. In a bowl, beat the butter and sugar until light and fluffy.

  3. Add the eggs and mix well.

  4. Stir in the cornmeal, water, sweet milk, and wheat flour until the mixture is soft enough to pour.

  5. Sift the baking powder into the mixture and combine thoroughly.

Bake

  1. Pour the batter into two greased baking tins.

  2. Bake for about 25-30 minutes or until golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the batter and add structure and richness as they set in the oven.
Cornmeal
Provides the main body and gritty, corn-forward texture of the cornbread.
Baking powder
Releases gas in the batter so the cornbread rises and turns light.
Butter
Adds fat for tenderness and rich flavor.
Light brown sugar
Adds sweetness and promotes browning on the crust.
Wheat flour
Adds gluten-forming protein that helps hold the crumb together.

The step that matters

Sift the baking powder into the mixture and combine thoroughly. Baking powder must be evenly distributed so the leavening acts throughout the batter. Uneven mixing leaves dense pockets and gaps in the rise.
